Slow Cooker Irish Potatoes
🧾 Ingredients
1.5–2 kg potatoes (Yukon Gold or similar), peeled and cut into chunks
1 onion, chopped
3 tbsp butter
1 cup chicken broth (or vegetable broth)
1 tsp salt (adjust to taste)
½ tsp black pepper
2 cloves garlic, minced (optional)
2 tbsp fresh parsley, chopped (for garnish)
👨‍🍳 Instructions

  1. Prep the slow cooker
    Lightly grease the slow cooker or spray with oil.
  2. Add ingredients
    Place potatoes and chopped onion inside.
    Add garlic (if using), salt, and pepper.
    Pour in the broth.
    Dot the top with butter.
  3. Cook
    Cover and cook on:
    Low: 6–7 hours
    High: 3–4 hours
    Potatoes should be fork-tender.
  4. Finish
    Gently stir to coat potatoes in the buttery sauce.
    Sprinkle with fresh parsley before serving.
    🍽️ Serve
    Great with roasted meat, sausages, or chicken.
    You can lightly mash them or leave chunky.
