Slow Cooker Irish Potatoes
🧾 Ingredients
1.5–2 kg potatoes (Yukon Gold or similar), peeled and cut into chunks
1 onion, chopped
3 tbsp butter
1 cup chicken broth (or vegetable broth)
1 tsp salt (adjust to taste)
½ tsp black pepper
2 cloves garlic, minced (optional)
2 tbsp fresh parsley, chopped (for garnish)
👨🍳 Instructions
- Prep the slow cooker
Lightly grease the slow cooker or spray with oil. - Add ingredients
Place potatoes and chopped onion inside.
Add garlic (if using), salt, and pepper.
Pour in the broth.
Dot the top with butter. - Cook
Cover and cook on:
Low: 6–7 hours
High: 3–4 hours
Potatoes should be fork-tender. - Finish
Gently stir to coat potatoes in the buttery sauce.
Sprinkle with fresh parsley before serving.
🍽️ Serve
Great with roasted meat, sausages, or chicken.
You can lightly mash them or leave chunky.
