Cucumber Tea Sandwiches
Light, delicate, and refreshing, cucumber tea sandwiches are a classic choice for afternoon tea, brunches, parties, or elegant snacks.
Ingredients
1 cucumber, thinly sliced
8 slices soft white bread
4 ounces cream cheese, softened
2 tablespoons mayonnaise
1 tablespoon fresh dill, finely chopped
1 teaspoon lemon juice
1/4 teaspoon garlic powder
Salt and black pepper, to taste
Optional Additions
Fresh chives or parsley
Thinly sliced radishes
Smoked salmon
Cracked black pepper
Everything bagel seasoning
Instructions
Wash and thinly slice the cucumber. Pat slices dry with paper towels to remove excess moisture.
In a bowl, mix cream cheese, mayonnaise, dill, lemon juice, garlic powder, salt, and pepper until smooth.
Spread the cream cheese mixture evenly over each slice of bread.
Arrange cucumber slices in a single layer on half of the bread slices.
Top with the remaining bread slices.
Trim crusts off the sandwiches for a traditional tea sandwich presentation.
Cut into triangles, rectangles, or small squares.
Chill for 15–20 minutes before serving for the best texture.
Tips for Success
Use very soft bread for delicate sandwiches.
English cucumbers work especially well because they contain fewer seeds.
Pat cucumbers dry well to prevent soggy sandwiches.
Prepare shortly before serving for maximum freshness.
