Perfect Prime Rib Roast
🛒 Ingredients
1 prime rib roast (bone-in or boneless, any size)
Garlic powder
Salt (kosher salt preferred)
Freshly ground black pepper
👩‍🍳 Directions
1️⃣ Bring to Room Temperature
Remove roast from refrigerator 2–3 hours before cooking.
Pat dry with paper towels.
(Dry surface = better crust.)
2️⃣ Season Generously
Rub the entire roast with salt, pepper, and garlic powder.
Use plenty of seasoning — this is a large cut of meat.
Optional: lightly rub with olive oil before seasoning for better adhesion.
3️⃣ Preheat & Initial High Heat
Preheat oven to 230°C (450°F).
Place roast fat-side up on a rack in a roasting pan.
Roast for 15–20 minutes to develop a crust.
4️⃣ Lower Temperature to Finish
Reduce oven to 160°C (325°F).
Continue roasting until internal temperature reaches:
Doneness
Internal Temp
Rare
48–50°C (118–122°F)
Medium Rare
52–54°C (125–130°F)
Medium
57–60°C (135–140°F)
👉 Estimate about 15 minutes per pound (500 g), but always use a meat thermometer for accuracy.
5️⃣ Rest (Very Important!)
Remove from oven when it’s 5°C (5–10°F) below your target temperature.
Tent loosely with foil.
Rest 20–30 minutes before slicing.
(Juices redistribute and temperature rises slightly.)
🔪 How to Slice
For bone-in: cut bones away first, then slice.
Slice against the grain for tenderness.

Yorkshire pudding
Horseradish sauce
Au jus (pan drippings with beef broth)
