Hearty Beef & Mushroom Stew
🛒 Ingredients (Serves 4–6)
2 lbs (900 g) beef chuck, cut into large cubes
2 tablespoons flour
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups mushrooms, sliced
2 tablespoons tomato paste
2 cups beef broth
1 cup water
1 teaspoon dried thyme
1 teaspoon paprika
1 bay leaf
1 tablespoon Worcestershire sauce
1 teaspoon sugar (optional)
👩‍🍳 Instructions
1️⃣ Season & Sear
Toss beef with flour, salt, and pepper.
Heat oil in a heavy pot or Dutch oven over medium-high heat.
Sear beef in batches until browned on all sides. Remove and set aside.
2️⃣ Build Flavor
In the same pot, sauté onion for 3–4 minutes.
Add garlic and cook 30 seconds.
Stir in mushrooms and cook until softened (about 5 minutes).
Add tomato paste and cook 1–2 minutes to deepen flavor.
3️⃣ Simmer Low & Slow
Return beef to the pot.
Add broth, water, thyme, paprika, bay leaf, Worcestershire sauce, and sugar.
Bring to a gentle boil, then reduce to low.
Cover and simmer for 1½–2 hours, stirring occasionally.
The stew is ready when the beef is fork-tender and the sauce is thick and rich.
🔥 Slow Cooker Option
After searing beef and sautéing vegetables, transfer everything to a slow cooker.
Cook on LOW 6–8 hours or HIGH 4–5 hours.

Buttered noodles
Crusty bread
Steamed rice
💡 Extra Rich Version
Stir in 1 tablespoon butter at the end for shine and silkiness.
