Homemade Fruit Cobbler
Warm, bubbly fruit topped with a golden, buttery crust — simple, comforting, and perfect with vanilla ice cream.
🛒 Ingredients (Serves 6–8)
For the Fruit Filling
5 cups fresh or frozen fruit (peaches, berries, apples, cherries, or mixed fruit)
¾ cup granulated sugar (adjust depending on sweetness of fruit)
1 tablespoon lemon juice
1 tablespoon cornstarch
½ teaspoon cinnamon (optional)
¼ teaspoon nutmeg (optional)
For the Cobbler Topping
1 cup all-purpose flour
½ cup granulated sugar
1½ teaspoons baking powder
¼ teaspoon salt
½ cup milk
½ cup (1 stick / 115 g) melted butter
1 teaspoon vanilla extract

1️⃣ Preheat
Preheat oven to 375°F (190°C).
Lightly grease a 9×9-inch baking dish.
2️⃣ Prepare the Fruit Filling
In a bowl, mix fruit, sugar, lemon juice, cornstarch, and spices.
Pour into prepared baking dish and spread evenly.
3️⃣ Make the Topping
In a separate bowl:
Whisk flour, sugar, baking powder, and salt.
Stir in milk, melted butter, and vanilla until just combined.
Batter will be slightly thick.
4️⃣ Assemble
Spoon the batter evenly over the fruit (it doesn’t have to fully cover; it will spread while baking).
5️⃣ Bake
Bake 40–45 minutes until:
Top is golden brown
Fruit is bubbly around the edges
If browning too quickly, loosely cover with foil.
6️⃣ Cool Slightly & Serve
Let rest 10–15 minutes before serving.
Serve warm.
