Garlic Chicken with Broccoli & Spinach
A quick, healthy, one-pan dinner packed with protein and veggies — perfect for busy weeknights.

📝 Ingredients
1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and black pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
2 cups broccoli florets
1 cup fresh spinach
1 cup cherry tomatoes, halved
½ cup chicken broth
¼ cup light cream (optional, for creaminess)
1 tablespoon lemon juice
1 teaspoon dried oregano
½ teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
👩‍🍳 Instructions
Season the chicken
Pat chicken dry and season with salt and pepper.
Cook the chicken
Heat olive oil in a large skillet over medium-high heat.
Add chicken in a single layer and cook 5–7 minutes, stirring occasionally, until golden and cooked through.
Remove from skillet and set aside.
Sauté garlic & broccoli
In the same pan, reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant.
Add broccoli and cook 3–4 minutes until slightly tender but still crisp.
Add tomatoes & seasoning
Stir in cherry tomatoes, oregano, and red pepper flakes. Cook 2 minutes.
Create the sauce
Pour in chicken broth and let simmer 2–3 minutes.
Stir in light cream (if using) and lemon juice.
Add spinach & chicken back
Return chicken to the skillet.
Add spinach and cook until wilted (about 1–2 minutes).
Finish & serve
Taste and adjust seasoning if needed.
Garnish with fresh parsley and serve warm.
