Marinated Cucumber Salad

Marinated Cucumber Salad (Fresh, Tangy & Crisp)
Yields: 4 servings
Prep time: 15 minutes
Chill time: 30 minutes (recommended)
🛒 Ingredients
3 large cucumbers, thinly sliced
½ small red onion, very thinly sliced
¼ cup white vinegar (or apple cider vinegar)
2 tablespoons olive oil
1–2 tablespoons sugar (adjust to taste)
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
Optional: 1 tablespoon fresh parsley or a pinch of red pepper flakes
👩‍🍳 Instructions
Prep the veggies:
Slice cucumbers and red onion thinly. Place in a large bowl.
Make the marinade:
In a small bowl, whisk together vinegar, olive oil, sugar, salt, and pepper until sugar dissolves.
Combine:
Pour marinade over cucumbers and onions. Add dill and toss well to coat.
Chill:
Cover and refrigerate for at least 30 minutes (1–2 hours is even better for flavor).
Serve:
Toss again before serving. Adjust salt or sweetness if needed.
