Loaded Cheesy Pocket Tacos
Crispy on the outside, melty and loaded on the inside — these handheld taco pockets are perfect for dinner or game night!
🛒 Ingredients (Makes 8 pockets)
🌮 Taco Filling
1 lb ground beef
1 tbsp olive oil
1 packet taco seasoning (or 2 tbsp homemade)
1/3 cup water
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella (for extra melt)
1/2 cup diced tomatoes (drained)
1/4 cup diced onion
1/4 cup sliced jalapeños (optional)
🫓 For the Pockets
8 small flour tortillas
1 tbsp butter or oil (for crisping)
Optional toppings:
Sour cream
Salsa
Guacamole
Shredded lettuce
👩🍳 Instructions
1️⃣ Cook the Beef
Heat olive oil in a skillet over medium heat.
Add ground beef and cook until browned.
Drain excess grease.
Stir in taco seasoning and water.
Simmer 3–4 minutes until thickened. Remove from heat.
2️⃣ Assemble the Pockets
Lay a tortilla flat.
Add:
2–3 tablespoons taco beef
Sprinkle cheddar & mozzarella
Add tomatoes, onions, and jalapeños
Fold sides inward, then roll tightly into a sealed pocket (like a burrito).
3️⃣ Crisp the Pockets
Heat a skillet over medium heat.
Lightly brush tortillas with butter or oil.
Cook seam-side down first.
Grill 2–3 minutes per side until golden brown and crispy, and cheese is melted.
🔥 Air Fryer Option
Air fry at 375°F (190°C) for 6–8 minutes, flipping halfway.
