1 cup heavy whipping cream
4 oz (115g) full-fat cream cheese, softened
2–3 tablespoons powdered erythritol (or zero-carb sweetener of choice)
1 teaspoon sugar-free strawberry extract
2–3 drops natural pink food coloring (optional)
½ teaspoon vanilla extract (optional)
👩‍🍳 Instructions
Whip the cream
In a mixing bowl, whip the heavy cream until stiff peaks form.
Set aside.
Blend the base
In another bowl, beat the softened cream cheese until smooth.
Add sweetener, strawberry extract, and vanilla. Mix until creamy.
Fold together
Gently fold the whipped cream into the cream cheese mixture.
Do not overmix — keep it light and fluffy.
Chill
Spoon into serving cups and refrigerate at least 1 hour before serving.
