Slow Cooker Onion Potatoes
✅ Ingredients
6–8 medium potatoes, sliced (Yukon gold or russet)
1 large onion, thinly sliced
3 tbsp butter, melted
2 tbsp olive oil
1 tsp garlic powder
½ tsp paprika
½ tsp dried thyme (optional)
Salt and black pepper, to taste
½ cup chicken broth (or vegetable broth)

  1. Prep ingredients
    Slice potatoes evenly (about ½ cm thick).
    Slice onions thinly.
  2. Layer in slow cooker
    Lightly grease the slow cooker.
    Add a layer of potatoes, then onions.
    Sprinkle with salt, pepper, and spices.
    Repeat layers until everything is used.
  3. Add liquids
    Mix melted butter and olive oil, then pour over potatoes.
    Pour in broth.
  4. Cook
    Cover and cook:
    LOW: 5–6 hours
    HIGH: 2.5–3 hours
    Potatoes should be tender when pierced with a fork.
  5. Finish & serve
    Gently stir before serving.
    Taste and adjust seasoning.

    Use Yukon gold potatoes for a creamy texture
    Add shredded cheese in the last 20 minutes for a cheesy version
    For crispy edges, transfer to oven and broil for 5 minutes
