Cheesy Stuffed Meatloaf Bites
🧾 Ingredients:
1 lb (450 g) ground beef
½ cup breadcrumbs
1 egg
¼ cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
Salt & black pepper, to taste
1 cup mozzarella or cheddar cheese, cut into small cubes
Optional glaze:
¼ cup ketchup
1 tablespoon brown sugar
1 teaspoon mustard
👩🍳 Instructions:
Preheat oven
Set to 190°C (375°F) and line a baking sheet or grease a mini muffin tin.
Make the meat mixture
In a bowl, combine ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, salt, and pepper. Mix until just combined (don’t overmix).
Form and stuff
Take a small portion of the meat mixture (about 2 tablespoons), flatten it, and place a cube of cheese in the center.
Wrap the meat around the cheese and roll into a ball. Repeat with remaining mixture.
Arrange
Place the meatloaf bites on the baking sheet or into the muffin tin.
Add glaze (optional)
Mix ketchup, brown sugar, and mustard, then brush a little on top of each bite.
Bake
Bake for 18–22 minutes, or until cooked through and nicely browned.
Serve
Let cool slightly before serving—the cheese inside will be hot and melty!
