🛒 Ingredients
1 1/2 cups all-purpose flour
1 teaspoon salt
1 tablespoon white sugar
3 1/2 teaspoons baking powder
1 1/4 cups milk
1 egg
3 tablespoons melted butter (plus extra for cooking)
1 teaspoon vanilla extract (optional)

Mix dry ingredients
In a large bowl, whisk together flour, salt, sugar, and baking powder.
Combine wet ingredients
In another bowl, whisk milk, egg, melted butter, and vanilla.
Make the batter
Pour wet ingredients into dry ingredients.
Mix gently until just combined (a few lumps are okay—don’t overmix).
Heat the pan
Heat a non-stick pan or griddle over medium heat and lightly grease with butter.
Cook pancakes
Pour about 1/4 cup batter per pancake.
Cook until bubbles form on top (2–3 minutes), then flip and cook another 1–2 minutes until golden.
