Coconut Chewies (Soft & Sweet Coconut Bars)
🧾 Ingredients
2 cups shredded coconut (sweetened or unsweetened)
1 can (395g) sweetened condensed milk
1 tsp vanilla extract
¼ tsp salt
Optional:
½ cup chocolate chips or melted chocolate for topping
👨‍🍳 Instructions

  1. Preheat
    Preheat oven to 180°C (350°F).
    Line a baking dish (20×20 cm) with parchment paper.
  2. Mix
    In a bowl, combine shredded coconut, condensed milk, vanilla, and salt.
    Stir until everything is well coated and sticky.
  3. Press
    Transfer mixture to the baking dish.
    Press down firmly into an even layer.
  4. Bake
    Bake for 20–25 minutes until the top is lightly golden.
  5. Cool
    Let cool completely before cutting into squares or bars.
  6. Optional topping
    Drizzle or spread melted chocolate over the top and let set.
    🍽️ Serve
    Cut into small chewy squares.
    Perfect with tea or coffee.
    💡 Tips
    For extra chewiness, don’t overbake.
    Add chopped nuts for crunch.
    Store in an airtight container for up to 4–5 days.
