Almond Raisin Tea Cake (Soft & Buttery Loaf)
Ingredients
Dry Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Wet Ingredients
1/2 cup unsalted butter, softened
3/4 cup sugar
2 eggs
1 tsp vanilla extract
1/2 tsp almond extract
3/4 cup milk or buttermilk
Add-Ins
1/2 cup raisins
1/2 cup chopped almonds
Optional Topping
Sliced almonds
Light sprinkle of sugar
Instructions
Preheat Oven
Preheat oven to 350°F (175°C). Grease and line a loaf pan.
Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, baking soda, and salt.
Cream Butter & Sugar
In a large bowl, beat butter and sugar until light and fluffy.
Add Eggs & Flavoring
Beat in eggs one at a time. Mix in vanilla and almond extract.
Combine Batter
Add dry ingredients alternately with milk, mixing just until combined.
Fold in Raisins & Almonds
Gently stir in raisins and chopped almonds.
Bake
Pour batter into prepared loaf pan. Top with sliced almonds if desired.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve
Let cool in pan for 10 minutes, then transfer to a wire rack.
