Ingredients
2 cups roasted peanuts (salted or unsalted)
1 cup sugar-free chocolate chips
2 tbsp coconut oil or butter
1/2 tsp vanilla extract
Pinch of sea salt (optional)
Instructions
Melt the Chocolate
In a microwave-safe bowl, combine sugar-free chocolate chips and coconut oil.
Microwave in 20-second intervals, stirring each time, until smooth.
Add Flavor
Stir in vanilla extract and a pinch of sea salt if using.
Mix in Peanuts
Fold peanuts into the melted chocolate until fully coated.
Form Clusters
Drop spoonfuls of the mixture onto a parchment-lined tray or plate.
Chill
Refrigerate for 30–45 minutes, or until firm.
Serve & Store
Keep stored in an airtight container in the refrigerator.
