Buttered Cabbage and Potatoes
Ingredients
1 small green cabbage, chopped
4 medium potatoes, peeled and diced
4 tbsp butter
1 small onion, chopped
2 cloves garlic, minced
1 tsp salt (or to taste)
1/2 tsp black pepper
1/2 tsp paprika (optional)
2 tbsp fresh parsley, chopped
1/4 cup chicken broth or water
Optional Additions
Cooked bacon pieces
Smoked sausage slices
Shredded cheddar cheese
Red pepper flakes for heat
Instructions
Cook the Potatoes
Place diced potatoes in a large pot of salted water. Boil for 10–12 minutes until fork-tender. Drain and set aside.
Sauté the Onion and Garlic
In a large skillet or Dutch oven, melt 2 tablespoons of butter over medium heat. Add onion and cook for 3–4 minutes until soft. Stir in garlic and cook for 30 seconds.
Cook the Cabbage
Add chopped cabbage and broth (or water). Cover and cook for 8–10 minutes, stirring occasionally, until cabbage becomes tender.
Combine Everything
Add the cooked potatoes to the skillet. Stir gently to combine.
Season and Butter
Add remaining butter, salt, pepper, and paprika. Toss until everything is coated and heated through.
Finish and Serve
Sprinkle with fresh parsley and serve warm.
Tips for Success
Use Yukon Gold potatoes for extra creamy texture.
Don’t overcook the cabbage; it should stay slightly tender-crisp.
Add bacon or sausage to make it a full meal.
A splash of apple cider vinegar brightens the flavor nicely.
