Classic Depression-Era Potato & Onion Stew
📝 Ingredients
4–5 medium potatoes, peeled and diced
1 large onion, thinly sliced
3 cups water (or broth if available)
2 tablespoons butter (or oil, or even bacon fat for more flavor)
2 tablespoons all-purpose flour
1 cup milk (optional, for a creamy version)
Salt, to taste
Black pepper, to taste

Cook the potatoes & onions
In a large pot, combine diced potatoes, sliced onion, and water.
Add a pinch of salt.
Bring to a boil, then reduce heat and simmer for about 15–20 minutes, until potatoes are tender.
Make a simple roux
In a separate pan, melt butter over medium heat.
Stir in flour and cook for 1–2 minutes until lightly golden (this thickens the stew).
Thicken the stew
Slowly stir the roux into the pot.
Mix well so it dissolves smoothly.
Add milk (optional)
Pour in milk for a creamier texture.
Stir and simmer for another 5 minutes until slightly thickened.
Season & serve
Add salt and black pepper to taste.
Serve hot with bread if you have it.
