Delicious Cauliflower & Broccoli Casserole
Ingredients
1 medium head cauliflower, cut into florets
1 medium head broccoli, cut into florets
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk (warm)
1 ½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper, to taste
½ teaspoon paprika (optional)
1 cup breadcrumbs (optional, for topping)
2 tablespoons melted butter (for topping)
Instructions
Preheat oven
Set your oven to 180°C (350°F). Grease a baking dish.
Cook vegetables
Bring a large pot of salted water to a boil. Add cauliflower and broccoli and cook for 4–5 minutes until just tender. Drain and set aside.
Make cheese sauce
In a saucepan, melt butter over medium heat.
Stir in flour and cook for 1–2 minutes (this removes the raw flour taste).
Gradually whisk in warm milk, stirring constantly until smooth and thickened.
Add cheddar and Parmesan cheeses, stirring until melted.
Season with garlic powder, onion powder, salt, pepper, and paprika.
Combine
Add the cooked vegetables to the cheese sauce and gently mix until coated.
Assemble
Pour into the prepared baking dish.
Add topping (optional but recommended)
Mix breadcrumbs with melted butter and sprinkle over the top.
Bake
Bake for 25–30 minutes until bubbly and golden on top.
Tips & Variations
Add cooked chicken or ground beef to turn it into a hearty main dish.
Swap cheddar for mozzarella or Gruyère for a different flavor.
For a low-carb version, skip the flour and use cream instead.
Add a pinch of chili flakes for a little heat 🌶️
