Bacon Brown Sugar Pork
Ingredients
1½ to 2 lbs pork tenderloin or pork loin
8–10 slices bacon
1/2 cup brown sugar
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon salt
1 tablespoon Dijon mustard (optional)
1 tablespoon olive oil
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with foil.
Pat the pork dry with paper towels. Rub with olive oil and Dijon mustard if using.
In a small bowl, mix together:
brown sugar
garlic powder
smoked paprika
onion powder
black pepper
salt
Coat the pork evenly with the brown sugar spice mixture.
Wrap bacon slices around the pork, slightly overlapping each piece. Secure with toothpicks if needed.
Place the pork in the prepared baking dish. Sprinkle any remaining brown sugar mixture over the top.
Bake uncovered for 35–45 minutes, or until the internal temperature reaches 145°F (63°C).
For extra crispy bacon, broil for the last 3–5 minutes.
Remove from oven and let rest for 5–10 minutes before slicing.
Optional Glaze
For a sticky finish, brush with:
2 tablespoons maple syrup
1 tablespoon Dijon mustard
during the last 10 minutes of baking.
