Cottage Cheese Pizza Bites
Cheesy, Easy & High-Protein Snack
A fun, low-carb, protein-packed snack that tastes like mini crustless pizzas. Perfect for meal prep, lunchboxes, or a quick savory bite!
🛒 Ingredients (Makes ~10 bites)
1 cup cottage cheese
1/2 cup pizza sauce
1/2 cup shredded mozzarella cheese
Optional toppings:
Mini pepperoni
Diced bell peppers
Olives
Italian seasoning
Red pepper flakes
👩🍳 Instructions
1️⃣ Preheat
Preheat oven to 375°F (190°C).
Lightly grease a mini muffin tin or line with silicone molds.
2️⃣ Mix the Base
In a bowl, combine:
Cottage cheese
Half of the mozzarella (reserve the rest for topping)
Stir until evenly mixed.
3️⃣ Fill the Muffin Tin
Spoon the mixture evenly into the mini muffin cups, filling about 3/4 full.
Top each bite with:
A small spoon of pizza sauce
A sprinkle of remaining mozzarella
Any optional toppings you like
4️⃣ Bake
Bake for 15–18 minutes, or until:
Cheese is melted
Tops are lightly golden
Centers are set
5️⃣ Cool & Serve
Let cool for 5–10 minutes before removing from the pan.
They firm up as they cool.
