Southern Hoecakes
Classic Southern hoecakes are crispy on the outside, soft in the middle, and perfect with butter, syrup, honey, or alongside beans, greens, or fried chicken.
Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon sugar (optional)
3/4 cup buttermilk
1/4 cup water
1 large egg
2 tablespoons melted butter or bacon grease
Extra oil or bacon grease for frying
Instructions
In a large bowl, mix the cornmeal, flour, baking powder, salt, and sugar.
In another bowl, whisk together the buttermilk, water, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until combined. The batter should be thick but scoopable. Add a little more water if needed.
Heat a skillet or griddle over medium heat and lightly grease with oil or bacon grease.
Drop about 1/4 cup batter for each hoecake into the hot skillet and flatten slightly.
Cook for 2–3 minutes per side until golden brown and crispy.
Serve hot with butter, maple syrup, honey, or savory dishes.

Chopped green onions
Shredded cheddar cheese
Jalapeños
Crumbled cooked bacon
Tips
Bacon grease gives the most authentic Southern flavor.
For crispier hoecakes, make the batter slightly thinner.
Cast iron skillets work best for a golden crust.
